Green Seasoning is a must in any Guyanese household. We are very serious about our food having flavour and green seasoning is a sure way of making that happen. The best part about making it, is it’s quite easy and it is a combination of just about anything.

Ingredients

Fat leaf thyme (about 3 – 4 stalks)

Fine leaf thyme (1 bundle)

2 Onions

1 head of Garlic

1/4lb Ginger

10 Miwiri peppers – if you’re using chilis, you can use about 2

Parsley (1 bundle)

Celery (1 bundle)

Cilantro (1 bundle)

Shallot/Green onions

Basil (1 bundle). If using married man pork, use about a small stalk since it’s taste is very distinct.

Rosemary (1 bundle)

Combine all the ingredients in a blender. Add vinegar. Blend for about 1 minute or until the ingredients are a green liquid.

Store excess in a container in refrigerator.
